Lettuce Among Us

So we planted lots of seeds about 6 weeks ago.  And our plants have been growing — but nothing has been ready for harvesting EXCEPT our lettuce.  For the past two weeks or so, we have been enjoying back yard salads every night.  And tonight was the first night that we were able to make a salad for five using only the lettuce and arugula from our garden.

After a good rinse and spin, we can use the BEAUTIFUL bowl that my sister-in-law and brother-in-law brought us back from Belize:

And fill it up with the freshest salad once can prepare:

I’ve also started to make our own dressings.  While we still love Annie’s Goddess dressing – thanks  to my brother – even the Picky Eater will eat salad with homemade dressing on it.

Our standby recipe is familiar to many of our readers, but for those who want to know, here you go:

Find an old jelly jar (preferably from the farmer’s market :).

Fill with:

  • 2 tablespoons good quality olive oil
  • 1 tablespoon vinegar (we like either balsamic or rice)
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon or stoneground mustard
  • dash of soy sauce
  • 1/2 teaspoon sugar
  • fresh or dried herbs to taste
  • 1 clove crushed garlic
Close the jar, and shake it up really well.  Add a little water to thin. Taste. Adjust seasonings to your liking.

Then toss gently with the fresh lettuce in the bowl.

Now, enjoy!
