Lovely Lamb Soup – Dark Days Challenge Week 3

Soup is a wonderful thing. Especially when it is cold outside, and you just happened to pick up some lamb soup bones from the farmer’s market. And when the veggies are still abundant at the market…

So, our Dark Days Meal for Week 3 is a lovely lamb soup accompanied with bread from Atwater’s.

We began by making a stock from the lamb bones, filling up the pot with carrot tops, onions studded with cloves (okay those aren’t local), some limp celery from Thanksgiving, salt and peppercorns.

After letting that come to a boil, then simmer and bubble for 2 hours or so, we strained the broth into another soup pot.

The broth then became the base of our soup.

We added:

  • lamb cut off from the stock bones
  • diced carrots
  • diced white potatoes
  • dill
  • garlic

We then let the soup simmer for about 30 minutes or so, and then topped it with some feta from Fields of Grace.

Even the Picky Eater ate it all up!

Beverage accompaniments included ginger beer from the Appalachian Brewing Company (120 miles away).

  1. Liz, your soup looked great. Perfect for a cold and nippy day.

  2. Looks great, and I see we favor the same local brewing company. I haven’t had the ginger beer, but the root beer is to die for!
