Getting Ready for the Southern SOLE Food Challenge

So, a group of us, led by Sincerely Emily, participated in the southern group of the Dark Days Challenge.  We had so much fun eating, reading, and writing together, that we have decided to continue to read and write about all that we eat and cook that is S.O.L.E.  For those of you not immersed in alphabet soup (in my other life, I’m a Fed, so it’s normal for me :)!), that is Sustainable, Organic, Local, and/or Ethical.  We’re not going to jump into the definitions here – for me, it’s about eating what is good for our family, what is delicious, and preparing as much as I can from food within the 100-150 mile range of our “homestead.”

Pretty cool, huh?!

Why Do I Love Wednesdays?

Not because it is “hump day,” although I do appreciate the momentum toward the weekend.

But rather because I can open the paper in the morning, and start my day with reflections on food, and cooking, and eating….

This morning, I woke up to:

Grilled cabbage? With Udon noodles and cilantro. All of which are in my fridge. Check for a good start to grillin’ season.

Homemade mayonnaise? I have never really thought about making it from scratch. Two of my three big eaters are anti-mayonnaise, but… the description of dipping asparagus in this mayo until the bowl is clean has made me reconsider… and it’s a long weekend comin’ up.

Pressure cooker? Not necessarily convinced by the article, but this is one of those kitchen tools that keeps popping up in my “really need to think about trying list.”

See – this is why I like Wednesdays!

Anyone else out there like Wednesdays too?

What To Do With Lettuce

The New York Times Health section online is focusing on lettuce recipes beyond salad in preparation for CSA time. This I am bookmarking. My last attempt at lettuce soup was an abject failure. Today’s recipe looks great, however, and it will provide me with an excuse to use my immersion blender…

Already, lettuce is everywhere!
